Hatzidakis Assyrtiko 2015
Don't worry if you can't pronounce it - assyrtiko is your friend. It thrives on the volcanic soils of Santorini where the old vines are trained into baskets to protect the grapes from the high winds coming off the sea. Hatzidakis is working in the traditional style - natural yeast and slightly oxidative winemaking so while the wines are still crisp and dry they have some additional weight and texture. If you're a fan of Chablis, you'll probably like this wine. White Bordeaux? You'll probably like this wine. Chardonnay? Sancerre? White Rioja? It's just that versatile.
