Hermit Ram Skin Fermented Sauvignon Blanc 2016
We will admit we are a little obsessed with this one. It's definitely not your "regular" New Zealand sauvy. The skin contact (a wine making step that white wine usually avoids) adds an extra hit of flavor and texture - herbal aromatics, a touch of exotic spice, some welcome salinity and a weightless density (yea yea yea, that's a bit of an oxymoron, so just roll with it!) It's from the Canterbury region, which is becoming another obsession... it's a place where limestone runs free... and that's a good thing for grapes.
