I would like to be able to tell you all the specific details about this cider. It's mainly a cider, well, it IS a cider. But there are grapes involved. Or grape skins. I think the second fermenation, the one that takes place in bottle and makes the final wine sparkle, is kicked off by refermenting grape skins. I think. But the truth is, I really don't know. Deirdre told me everything at RAW when I was jet lagged and she could barely speak above a whipser and it was already loud and super busy not even two hours into the day. I should have written it down, but I was too busy drinking it. I didn't even manage to grab a picture - which is too bad because the bottle is beautiful. But it was delcious - and you can bet that I'm grabbing some for myself. Consider it a perk of the business.
