Little Apple Cidery Taconic Gold Dry Hard Cider
Hyber local goodness. Little Apple Cidery (and their organic orchard) are up in Hillsdale. This particular bottling is their Taconic Gold Dry. It's made using the traditional method - two full fermentations, with the second happening fully in bottle which results in a lovely, elegant bubble. This is non-disgorged, so all the cloudy, floaty, textural goodness is left in the bottle. Some bottles open with a bit of a gush, so be prepared!
The only way this could get more local is if we were growing it in our own backyard. But why would we do it, when we can just drink the (fermented) fruit of Little Apple's labors?
