Sundstrom Cider Sponti 2016
This bottle is made from a veritable botanist’s textbook of apple varieties from the Hudson Valley and just a bit beyond. It’s old school style – spontaneous yeast fermentation (hence the name, “sponti”, about a half year on the lees, and the bottle unfined and unfiltered. It’s a dry cider, with a lovely appley tang, a bit of tannic structure, and a hint of earthiness.
Give it a try…even if you think you don’t like cider. This might just be the bottle that changes your mind.
